Delicious Tex Mex Burritos with Tofu and Spicy Lime Sauce

 

 

 

One thing I really love is a good burrito.  The fact that you can put a bunch of delicious ingredients you love in a tortilla, roll it up and eat it is really a win, win situation.  These tex mex burritos are truly amazingly delicious and I especially love them after a tough work out.  Sometimes I will actually think about them while I am working out as a reward for all my hard work… yes they are THAT good.

Eating a whole food plant based diet and being very active I like to mix up my macro-nutrient sources to make sure I am getting them all in a variety of ways.  I mean really, as long as you are eating a balanced diet whether you are an omnivore or vegan you shouldn’t have any macro nutrient deficiencies…. not even protein!  lol   What I do like to focus on is nutrient dense foods like beans, lentils and greens and rice… and guess what? They are all wrapped up here in a great combo held together by your favourite tortilla.

So if you are looking for something hearty, that hits the spot after a good work out or a long day at work you can whip these lovely’s up in no time.  There is enough in this recipe to make a big batch, so you can have some leftovers which are always welcome!

Instructions
  1. First make rice according to package directions. Set aside
  2. Mix all tex mex spices together in a small bowl and set aside
  3. In a small bowl mix together 2-3 tbsp vegenaise, 1/2 tsp garlic powder and 2 tbsp of Damien's Lima Zulu sauce and stir until blended well. Alternatively try adding fresh squeezed lime and chill pepper flakes to vegenaise mixing well.
  4. Make the burrito filling. In a large wok or skillet add olive oil or water if using, onions and minced garlic and saute until soft and translucent.
  5. Add tofu, peppers, mushrooms, tomatoes, chill pepper (if using) and tex mex spice blend and saute for a couple minutes (add small amount of water if needed to prevent sticking) Add black beans, corn and tomato paste and continue cooking until everything is fork tender and heated through (7-8 minutes). Spice with salt and pepper if desired.
  6. To make the burrito. Put tortilla on plate and spoon out desired amount of tex mex filling onto tortilla, add small amount of cooked rice, spicy lime sauce and desired amount of greens (spinach, kale or spring mix). Wrap up burrito tightly and enjoy!
